The late Gerard van der Harst did a low-poly modelling tutorial many years ago which has been considered a modelling classic almost as long. Many of us have learned from it over the years and I've uploaded it so it doesn't get lost again, since the pictures were hosted on another website and seem to have got lost.
Done in 3ds Max 7, the methods are highly applicable to Gmax too.
