a couple days ago, i put a container of red sauce i made a long time ago into the fridge, from the freezer to thaw. kinda like spagetti sauce but hot, and with chunks of chicken breast and thigh. it's somehow waayyyy hotter now than when i put it in there. it's so spicy it almost hurts :icon_lol: i don't remember that ever happening before. is that normal?
i can stop eating it, it's sooo goood. i know i'm gonna pay later though.

That's typical.

I've had to be careful with guacamole when I made it for a wedding - usually it gets eaten right away, but this was made a couple hours ahead of time, and I made sure to spice it less than I normally would, so after it sat for a while it wouldn't be ridiculously hot.

I think its the same principle with marinade - the spices permeate and flavors intensify the longer it sits.

Hmm, did you put red pepper flakes in it ?? Remember that the seeds and the membrane of the pepper carries the heat. And if you seasoned according to present taste at the time of the making then after it sets a day or so the heat WILL leach out of the seeds(flakes) and provide more heat than you thought you were getting.

yes, it's mostly cayanne and chili powder, but there were also a few of these things that a freind gave me. they look kinda like fresh green beans but they're hot. yesterday while i was typing the o/p, my face was sweating and my tounge felt as if i licked a car battery. i still have enough left to do it one more time.
