How on earth do you create a flight plan for AI aircraft? I don't want something that will convert flight plans from FS9, something that will create entirely new ones. A program that's not to complicated would be nice.
 
A good program is Don Grovestine's AI Flight Tool Version 2. Go to flightsim.com and so a search for Don Grovestine. Read the manual and instructions. Once you get the hang of it with practice it is a snap. Enjoy.
 
In addition to making AI traffic from scratch with AIFP2 you can do many useful things for AI traffic. For example seek somewhere in FSX lurking FS9 AI traffic files which prevent FSX traffic to be seen. Convert FS9 traffic files to FSX traffic files, etc. This program is a must (at least for me).

AIFP is an excellent tool, you can create from new or convert from FS9. An option I like alot is changing the aircraft types for a particular flight plan. For examply, if you build traffic files for a particular airport, you can swap the aircraft in seconds when you get bored of seeing them there !
