Anyways im wondering if anybody can help me (and bear with me this could take some explaining)

Does anybody know which section of the .cfg file I should edit to change how an aircraft turns eg a SU-27 or Mig 29 doesnt turn sharply it slides through the air as it turns and vice versa a Hawk turns sharpish without too much slide

Also which other section do I change so that an aircraft slows down quickly due to drag like piglets Bulldog

not sure but try playing with the scalars in the 'flight tuning' section,
the bigger the number the greater the effect, and vice-versa

Before you alter the cfg file, make sure you are making your turns at corner speed.

What is corner speed you ask? It is the speed at which a particular aircraft is most agile. Try to execute maneuvers above corner speed and the airframe will slip and slide through the air, below corner speed you may stall.

So, find out the corner speed, then try maneuvers flying as close as possible to corner speed.
