Hello Jollygreen and welcome.
CFS3 models are made with Gmax which is freeware: http://www.turbosquid.com/gmax
It then needs the SDK installing with it: http://www.microsoft.com/games/combatfs3/downloads.aspx#sdk
There are many tutorials around, a good starting point is Craig Murrays: http://www3.telus.net/murrdaka/tutorial/B2BNZ.htm
You then need lots of dedication and patience!
Many have started and many have failed.
If you're serious about it there are many people around here who are always happy to help.
