Still a newbie compared to many in here I am settling in for the long haul and have several airplanes that I've purchased or found via freeware that I enjoy
They are:
1. flyndive-Smaug_Freeware STOL aircraft
2. KitFox_Payware
3. BN-2_Islander_Payware
4. RV-8_Payware
5. Moonbat-XP-67_Freeware

After that it varies depending on the flight, but right now that spot goes to the Curtiss C-46.

No horse or bike to 'ride' in MSFS ;), so I'll stick to aircraft. Favourites at the moment are:

A2A Comanche
Tukan Trimotor
Virtavia Hampden
PMDG DC6
PMDG 737-700
Just Flight Tomahawk
Just Flight BAe 146
Just Flight Vulcan
Everything by Flying Iron

...and getting to grips with the GKS F-111, with which I am rather impressed.
 
For cargo I like the Kodiak for larger runs and the Tecnam P2006T cargo variant for smaller runs (both payware). For air taxi, the default DA62 with the "X" mod from fs.to is fun to fly if I need space for more than four, and the DA42VI (payware). I want to love the default King Air, but after all this time it's still buggier than an ant hill. The Black Square version of that plane and the Turbine Duke are both way more money than I want to spend for features that I'll never use. For longer/higher runs, the stock TBM is nice, along with two payware FFS jets - their Cirrus and Honda offerings are both very nice.

It's difficult for me to establish a classification here...
Right now I would say my aircraft of choice is probably the JPL Cessna C-152. I even prefer it to the A2A Comanche... So I guess the JPL would be my number 1, or very close.
Following it, I would maybe choose the Default KingAir with the BlackSquare steam gauges addon.
For faster flights, I would always fallback to the GKS Mig-21, my absolute favorite military jet in the sim.
For helicopters, I often end up getting the freeware HPG EC-135. I just wish it had functioning wipers, but hey, it's free and I'm not motivated to buy the EC145, so...
As a bonus, the default Icon A5 is definitely one of my favorite rides for short flights. I just wish the absolutely ridiculous water physics in MSFS would be taken care of....
