Quick question

I've seen a number of CFS3 videos recently, mainly on Youtube, and theres an aspect of some of them i'm curious about.
There are shots in the movies of the 'player' aircraft flying towards the camera then continuing past it. How do they this?

When i press F4, i get the 3 or 4 screen modes but they all follow the player aircraft.
How do these people get the camera to stay in the one spot, then fly the aircraft past it for an excellent filming scene?

My other question is what other programs there are to film videos, i already have Fraps.

Cheers and Merry Christmas,
Simon
