Fairly new to MSFS2020 so I don't know much about it.
Where are the traffic files located?
I flew into Stuttgart, Germany and found Frontier and Peach aircraft parked.
The only aircraft which I saw which would actually be in Stuttgart were some Tui aircraft.
Also, several AI land and then disappear. Is that normal for MSFS?

You probably have online traffic enabled. To fully answer your question, what version of MSFS are you running? M$ Store or Steam.

As for the disappearing AI, that is indeed normal, sadly.

Known bug - never been addressed unfortunately.

As for the traffic itself, there may be some addon packages that can be added to the Community folder, but offline is controlled by an AI somewhere - I don't think it's a local file that can be mod'd like back in the FS8-9-X days.

Thinking about Stream for FSX if that works better than FSX.
On MSFS, so far only impressed with the graphics. Planes are complicated to fly and sight-see.
I think they tried too hard to make it accurate to real life airliners, even though all they give you are A320s to fly.
I tried to get skins but don't know how to install them. Community folder works for complete aircraft, but not for skins.

That's strange. Repaints work for all of us here. You might want to check whether you don't have the "folder in a folder" effect after downloading. I.e. when opening the repaint for any given plane, make sure that, when you open that folder, you see the layout.json and manifest.json files. If that is the case, then you're good to go. If you don't see them, click on the main folder inside the folder and you should see them there. That is the folder you want in your community folder.

Planes are complicated to fly and sight-see.
If you don't mind the Garmin glass screens, most of the GA stuff is really easy to fly. The two stock planes I fly most are the TBM and the DA62. The TBM has been greatly improved over time and is now probably the best stock GA with no improvements. The only two issues are that the external model no longer displays the registration* and the copilot (like every other stock plane) is invisible from the inside. There was at one time a fix for the registration, but it has since been removed. I have it, and I can send it by PM if you want it. The invisible copilot being visible from the outside can be fixed by installing the invisible avatar package:

The other stocker that I fly is the DA62 with the realism mod from the .to site. There are many improvements over the stock plane, including the ability to see your copilot sitting beside you. The plane is a FADEC diesel, so each engine uses a single power lever to do everything. The prop pitch is optimized for all phases of flight by the computer. There is good documentation included with the package, but even so, once you get to know what's going on in the background, the plane is extremely simple to just jump in, fire up, and go fly.
