Weather Interpolation Between Airports

Does anyone know if the currently available weather engines can interpolate weather between airports using ground stations other than airports. I live near the coast of Southern California and between here and the desert, where there are airports, are some substantial mountains with no airports but there are ground stations. This is an issue when there is weather over those mountains as in the summer when we have monsoon weather and there are large thunderheads everywhere to the east except in FSX where it is crystal clear. It seems that the weather engines (at least the ones I've used) use airport data (which from personal experience can be several hours old) to figure out what's going on which is fine if there is a large enough concentration of them to work with, but it would be nice if we could get something closer to reality in this area to fill in some of the large gaps in between and maybe some of the newer ones do this. The FAR's mandate that we have all available information for our flights and in this case a little more would be better.
