Ok, taking the next step into Gmax. I'm aware of the excellent Milton Shupe tutorials but I'm looking for a broader spectrum of experiences in animating props, canopies and control surfaces? Hoping there is a relatively quick and dirty crash process that I can grow from. This is of course in relation to the afore mentioned converted models?
 
a long time ago there was a quick modeling guide by Craig Murray but I am not sure if it's still available.
Ask and ye shall receive – mind you this is now 19 years old and most of the links in this PDF are dead... It's still a good way to get the general overview.

I'm coming from CFS2/FS04 but CFS2/FS04 and CFS3 aircraft animation is largely the same as CFS3 overall.

A number basic parts (ailerons, elevons, rudder(s) flaps, props and tires) are just animated by the game it self. You name the part in gMax than make sure the axis is set right. All other animation are keyframe animations.
