I was wondering: flying from a coastal airbase and landing on a carrier, counts the landing as on the base you departed from, i.e. the base nearest by. Can this be changed?

I don't think it can be changed, unless you land on a fix carrier (not mobile) which is, in fact, a 3D object from an "airport" local scenery.
 
No Cees you can't, and like Daube already had mentioned it can't be changed with the sim. I guess you want to fill in your logbook?
In that case I recommend FS logbook editor, with that you can actually add a "airport"/ship as a destination, though you have to do it manually but at least the log will be complete.
