What is a good CFG editor that allows me the save the cfg files? Before i just used notepad to view and edit the CFG files. But for some reason windows will not let me save files using note pad.

I would not suggest to a user who is not aware that there is something like UAC nor knows what that does to disable it.
I would use the method mfitch suggested. Or install FSX in an own folder structure (not under the default program files), preferably on a dedicated harddisk.
