Variety is the most important for me. Too much of one thing makes it boring. While I love the uber realistic GAs from A2A/RealAir, but I don't fly them ALL the time, likewise with the warbirds, vintage GA, tubes, military jets, gliders...etc Likewise flying different 'mission' types keeps FSX fresh...ie short A-B, long A-B, bush flying, aerobatics/airshow routines, sight seeing, flight training/skills refreshers.
We all have our 'wish lists' but in the end it doesn't matter, as long as the developers get to make what they are passionate about and want to make...not what they think we want them to make. This can be said for any artist, musician, chef, software developer...etc...anyone who creates things. Do they create what they excites them, taking chances to bring new things, occasionally producing a 'dud' or do they reproduce what they think will sell lots of copies. I find I typically enjoy things from 'creators' more than I do from 'reproducers', even if what is being created doesn't fit my tastes, I really respect the creative process.
