A short while back whilst trying to get the Simshed Hercules to work in fsx I found this thread

On my system the problem file was envmap.bmp which I just renamed.

Yesterday I encountered the similar problem with the IRIS Harrier HUD

Other planes have a similar affliction e.g. TSR2

Anyway if you rename envmap.bmp then force a reload of the textures by changing the global texture resolution,
Options-Settings-Display-Global options, move the slider.
the problem is solved.

Works on my system with above mentioned planes.

A better solution would be to fix envmap.bmp, if someone knows how to? Or possibly put an altered version of the file in the affected airplane texture folder.

Other planes must also be affected, I did a quick search and found this

Interesting. I tried it briefly last night, and it did work, although FS wasn't too happy about having the file removed. Caused a few display problems elsewhere.
However, it's given me an idea or two which I'll try out tonight.
 
Looks like you've done the same as me, and made a "dummy" bmp. Works, but things like mirrors that rely on the reflection turn transparent. Fairly easy to fix by changing the alpha channel of any texture used for mirrors etc to white and not black.

I've been experimenting with the hud in the pa380 (fs9), I've got it working fine in FSXdemo,

but it's just a solid black slab in acceleration. I've tried swapping VC_A380_glasshud_t.bmp with other files known to work, but with no luck.
The panel parameters I'm using are;
