OT: Which version of Win7 should I install on my MacBook?

Home or Premium? Perhaps you meant Home Premium or Professional? I'd recommend Professional for the road since it supports folder and file encryption for those sensitive things you'd rather not share with the light-fingered. I'd also go for 64-bit since it supports 32-bit apps just fine (like FSX) but supports lots more memory for multitasking and is the way software is going anyway if you're buying anything new to load on it.

Two of my Win7 rigs are HomePremium.
I've got one running Ultimate (which has the same bells and whistles as Professional with a couple extra features that I really haven't used). Got Ultimate with the introductory retail pricing...half price...otherwise I would've just went with Pro.
The Win7Ult machine is one I use for work, so I need the extra networking features to run Rockwell Automation PLC software and to interface with our company network policies.
All three are 64bit, running on 64bit processors.
Don't bother with HomeBasic, which I don't think is even available anymore unless you're geting a stripped down OEM machine.
For home computer use, HomePremium is adequate. If you've got an extensive network or are using it for business use, I'd bump up to Pro right away.

Bootcamp will only do 2 CD's total, one is the driver CD and the first is the Windows Installation. So if your Windows Installation CD's are more then one for some reason (WinXP Media Center was 2 CD's), then you will need to place CD2 'with' your Drivers CD onto 'one' CD.

I think I am one of the few that discovered a way around this. I doubt you will have 2 CD's since they have all gone to DVD's.
The 2nd CD will be your drivers that Bootcamp downloads from Apple. When windows finishes loading up, it will then ask for a Drivers CD. Place that bootcamp drivers CD into the drive and let it load everything up.
Its actually pretty easy. Go into Bootcamp, create a space on the drive for Windows, it reboots into that zone of the drive, you place in the Windows CD, starts booting up and loading, then the drivers, then it reboots.
When you go to reboot into another drive, you hold down 'Option' key when its starting up and the drives available for you to boot up into will appear. You can also access the Windows drive from Bootcamp within Apples Settings center, where OSX will reboot into Windows.

My dad bought a Mac Pro and had windows installed on it through parallels. Another option to run windows through it is called Fusion.

Parallels and Fusion are brilliant programs, but unfortunately, FS will not run in them. They cannot legally place DX9 / DX10 on Macs (legally via other program installers) so they will not properly run. In Mac's OSX OS, you have Apps, which are their version of EXE's. (Executable Application). Fusion and Parallel create a Jar around the EXE to allow it to run in a mini virtual zone in OSX.
Some kids, a couple of years ago, got FS9 to work in OS9, but it was very choppy. They found that one game that was MS born would actually install DX9 into the Mac. They then figured out how to run FS in the Mac, I think through Wine, which I believe is also Fusion or a sister program of that. FSX wouldnt run though in OS9.
