How does this work? Do you just replace the t with a w and you are good to go?

The Winter has an added "_w" to the file name.

Example of DDS:

summer= fw_190a_5_t
winter= fw_190a_5_t_w

As far as I know, yes.
An aircraft with a both a _t and _w texture will change textures with the seasons.

(you beat my by a second OldCrow :d. And you are right; it is _t_w, not just _w)
