Yes, you can launch taildragger aircraft via the Acceleration catapult system - most if not all WWII carrier fighters/attack/bomber aircraft, that I'm aware of, had provisions for catapult launches. As GradyHappyG mentions, you'll need to add a [Launch_Assistance] entry to the aircraft's Aircraft.cfg file to make it work.
A super important item too, that really must be done if you are going to be cat-launching any period aircraft other than a modern heavy military aircraft, is a modification to your FSX.cfg file (if you have Acceleration).
1. Open your FSX.cfg file, and find the section that is titled [REALISM]
2. Underneath that/within this section of the FSX.cfg file, add the line: CatapultForceLimiter=0
This can make an incredible difference. What this does is it unlocks the Acceleration default-set catapult force, which is established for only heavy, modern, military jets. Once this is set at "0", FSX will actually take into consideration the details of the aircraft you have loaded, and only supply the amount of force needed to get the aircraft off the deck with enough speed. When working on the Warbirdsim Navy-modifed P-51D (which comes fully setup for catapult launches, just as the original did), I found that this modification of the FSX.cfg file was especially critical, as it was the difference between the catapult launching the aircraft at 300 mph off the deck, to a much more accurate 130-140 mph. This has also been brought up with aircraft like the Flying Stations carrier based aircraft - Swordfish, Sea Fury, and Wyvern. Even when you are operating lighter jets from carriers, like the T-45, it provides more accurate cat speeds than if left as default.
